Many people give and receive fruitcakes during the holiday season; and even though some don't seem to like fruitcake very much, it's a popular treat among our parrots and other birds! Check out this easy recipe for a bird-safe fruitcake variation that your feathered friend will love.
Prep Time: 15 minutes Cook Time: 20 minutes
Ingredients:
* 1 box 8.5 ounce Corn Muffin Mix * 3 Eggs (Shells Optional) * 1/2 cup Milk * 1/4 cup Plain Yogurt * 2 1/2 cups Mixed Fresh Fruit * Chopped Nuts (optional) * 1 tsp. Pure Vegetable Oil
Preparation:
Preheat oven to 400 degrees. Combine dry mix with eggs and milk, stirring thoroughly until mixed. Use a blender or food processor to chop and blend fruit and nuts into small pieces. Stir fruit and nuts into cornmeal mixture, mixing well. Add yogurt and stir.
Set mixture aside and use 1 tsp. of pure vegetable oil to grease an 8x8 or 9x9 glass baking dish. Pour mixture into dish and bake for 20 minutes or until golden brown and cooked through.
After baking, cool the fruitcake thoroughly and cut into pieces sized appropriately for your bird. Leftovers can be wrapped and placed in the freezer to be thawed and served as needed.
